After a weekend of beautiful weather, I was a bit sad waking up to clouds and rain, but life goes on. Salmon was on the brain and I remembered seeing it on the menu at a place a few months back before Food in the Fox was born. Paninoteca, located at 2025 North Richmond Street was the lunch destination today and I am glad it was, because hands down, this place rocks. The restaurant opened less than a year ago, though I am not sure what it was before. The parking lot is rather small, so if you are looking to get a good spot, you probably want to get there on non-peak hours.
Small Place, Flavorful Menu
The small restaurant has a menu with big flavor. The first time I was here, I was shocked at the items on the menu, as it if definitely not typical Appleton family style dinner food. One item that caught my attention was the Bac N Blue French Fries, which was french fires with apple wood bacon and blue cheese crumbles. Another interesting menu item was the A.B.B.L.T which was avocado, Fresh Basil, applewood bacon, bib lettuce, beefsteak, tomato, balsamic glaze aioli all on panini bread. I am getting hungry just writing about this. All of the sandwiches are served with a pickle spear and fresh carrots. For an additional $2, you can get a side of honey dill potato salad, pasta salad, french fries or chips.
I went with a Caesar salad with grilled salmon with tomato and red onion added. The large salad also came with a small roll and a side of butter. I also asked for the dressing on the side and they gave me a small bucket to drench the salad with. The salmon was cooked perfectly. It was a bit crispy on the outside and warm and juicy in the middle. Some of the fresh Parmesan cheese melted on top of the salmon and was greasy, cheesy goodness. The salad was $9, but well worth every bit. This place can be easy to drive by, but next time you are looking for a place to eat, give this place a shot!
